Istanbul Street Noodles (İstanbul Sokak Noodle'ı)

Ingredients

  • 300g egg noodles
  • 2 tbsp olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 200g mushrooms, sliced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot of boiling salted water, cook the egg noodles according to the package instructions. Drain and set aside.
  2. Heat the olive oil in a large pan over medium heat. Add the sliced onion and cook until softened.
  3. Add the minced garlic, julienned red and green bell peppers, and sliced mushrooms. Cook until the vegetables are tender.
  4. Stir in the paprika, cumin, salt, and pepper. Add the cooked noodles to the pan and toss to combine.
  5. Divide the noodles among serving plates and garnish with fresh parsley.
