Ingredients
- 300g egg noodles
- 2 tbsp olive oil
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 red bell pepper, julienned
- 1 green bell pepper, julienned
- 200g mushrooms, sliced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot of boiling salted water, cook the egg noodles according to the package instructions. Drain and set aside.
- Heat the olive oil in a large pan over medium heat. Add the sliced onion and cook until softened.
- Add the minced garlic, julienned red and green bell peppers, and sliced mushrooms. Cook until the vegetables are tender.
- Stir in the paprika, cumin, salt, and pepper. Add the cooked noodles to the pan and toss to combine.
- Divide the noodles among serving plates and garnish with fresh parsley.
