Ingredients

  • 4 eggs
  • 1 small onion, finely chopped
  • 1 tomato, diced
  • 50g prosciutto, chopped
  • 50g cheese, grated
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, beat the eggs with a pinch of salt and pepper.
  2. Heat the olive oil in a non-stick pan over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Add the diced tomato and prosciutto to the pan and cook for 2-3 minutes.
  5. Pour the beaten eggs into the pan and cook, stirring gently, until the eggs are set but still slightly runny.
  6. Sprinkle the grated cheese over the top of the fritaja and cook for another minute until the cheese melts.
  7. Slide the fritaja onto a plate, cut into wedges, and serve hot.
