Istrian Truffle Risotto (Istarski tartufi rižoto)
Istarski tartufi rižoto, or Istrian Truffle Risotto, is a luxurious and flavorful dish that originates from the Croatian region of Istria. This creamy risotto is infused with the earthy aroma of black truffles, making it a perfect indulgence for special occasions or a gourmet dinner at home.
Ingredients
- Arborio rice - 1 1/2 cups
- Vegetable or chicken broth - 4 cups
- Onion, finely chopped - 1
- Garlic, minced - 2 cloves
- Butter - 3 tbsp
- Olive oil - 2 tbsp
- White wine - 1/2 cup
- Grated Parmesan cheese - 1/2 cup
- Fresh black truffle, thinly sliced or truffle oil - 1-2 tbsp
- Salt and pepper to taste
Instructions
- In a saucepan, heat the broth and keep it warm over low heat.
- In a separate large pan, heat the butter and olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until translucent.
- Add the Arborio rice to the pan and stir to coat the grains with the butter and oil.
- Pour in the white wine and cook, stirring constantly, until the wine is fully absorbed.
- Begin adding the warm broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
- Continue this process until the rice is creamy and al dente, about 18-20 minutes.
- Stir in the grated Parmesan cheese and season with salt and pepper.
- Remove the risotto from the heat and gently fold in the sliced black truffle or truffle oil.
- Let the risotto rest for a few minutes before serving.
