Istrian Truffle Risotto (Istarski tartufi rižoto)

Ingredients

  • Arborio rice - 1 1/2 cups
  • Vegetable or chicken broth - 4 cups
  • Onion, finely chopped - 1
  • Garlic, minced - 2 cloves
  • Butter - 3 tbsp
  • Olive oil - 2 tbsp
  • White wine - 1/2 cup
  • Grated Parmesan cheese - 1/2 cup
  • Fresh black truffle, thinly sliced or truffle oil - 1-2 tbsp
  • Salt and pepper to taste

Instructions

  1. In a saucepan, heat the broth and keep it warm over low heat.
  2. In a separate large pan, heat the butter and olive oil over medium heat.
  3. Add the chopped onion and garlic, and sauté until translucent.
  4. Add the Arborio rice to the pan and stir to coat the grains with the butter and oil.
  5. Pour in the white wine and cook, stirring constantly, until the wine is fully absorbed.
  6. Begin adding the warm broth to the rice, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next.
  7. Continue this process until the rice is creamy and al dente, about 18-20 minutes.
  8. Stir in the grated Parmesan cheese and season with salt and pepper.
  9. Remove the risotto from the heat and gently fold in the sliced black truffle or truffle oil.
  10. Let the risotto rest for a few minutes before serving.
