Italian Arancini

Italian Arancini are delicious rice balls filled with cheese, meat, and peas, coated in breadcrumbs, and deep-fried to perfection. They make a great appetizer or snack for any occasion.

Italian Arancini

Ingredients

  • 3 cups cooked risotto rice
  • 1 cup grated mozzarella cheese
  • 1/2 cup cooked peas
  • 1/2 cup cooked ground beef or sausage
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Vegetable oil for frying
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the cooked risotto rice, mozzarella cheese, peas, ground beef or sausage, and Parmesan cheese. Season with salt and pepper.
  2. Take a small portion of the rice mixture and form it into a ball. Make a small indentation in the center and place a cube of mozzarella cheese. Close the ball to seal the cheese inside. Repeat with the remaining rice mixture.
  3. Dip each rice ball into the beaten eggs, then roll in the breadcrumbs until fully coated.
  4. In a deep pot, heat the vegetable oil to 350°F (180°C). Fry the arancini in batches until golden brown, about 4-5 minutes. Drain on paper towels.
