Italian Arancini
Italian Arancini are delicious rice balls filled with cheese, meat, and peas, coated in breadcrumbs, and deep-fried to perfection. They make a great appetizer or snack for any occasion.
Ingredients
- 3 cups cooked risotto rice
- 1 cup grated mozzarella cheese
- 1/2 cup cooked peas
- 1/2 cup cooked ground beef or sausage
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Salt and pepper to taste
Instructions
- In a large bowl, mix the cooked risotto rice, mozzarella cheese, peas, ground beef or sausage, and Parmesan cheese. Season with salt and pepper.
- Take a small portion of the rice mixture and form it into a ball. Make a small indentation in the center and place a cube of mozzarella cheese. Close the ball to seal the cheese inside. Repeat with the remaining rice mixture.
- Dip each rice ball into the beaten eggs, then roll in the breadcrumbs until fully coated.
- In a deep pot, heat the vegetable oil to 350°F (180°C). Fry the arancini in batches until golden brown, about 4-5 minutes. Drain on paper towels.
