Italian Tiramisu

Ingredients

  • 6 egg yolks
  • 3/4 cup granulated sugar
  • 1 cup mascarpone cheese
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 1 1/2 cups strong brewed coffee, cooled
  • 3 tablespoons coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Unsweetened cocoa powder, for dusting

Instructions

  1. In a heatproof bowl, whisk together egg yolks and sugar. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the mixture thickens and doubles in volume. Remove from heat and let it cool slightly.
  2. Add the mascarpone cheese to the egg yolk mixture and stir until smooth.
  3. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. In a shallow dish, combine the brewed coffee and coffee liqueur. Dip each ladyfinger into the coffee mixture for a few seconds, making sure not to soak them completely. Arrange a layer of soaked ladyfingers in the bottom of a 9x9 inch dish.
  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of soaked ladyfingers and the remaining mascarpone mixture.
  6. Cover and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, dust the top with unsweetened cocoa powder using a fine-mesh sieve.
