Ingredients

  • 2 pounds beef tripe, cleaned and cut into strips
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1/2 cup beef broth
  • 1/4 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the beef tripe to the pot and cook until browned.
  3. Pour in the crushed tomatoes, beef broth, red wine, and tomato paste. Stir to combine.
  4. Season with oregano, salt, and pepper. Cover the pot and simmer for 2 hours, stirring occasionally.
  5. Once the tripe is tender and the sauce has thickened, remove from heat.
  6. Serve the Italian tripe hot, sprinkled with grated Parmesan cheese.
