Ingredients
- 2 pounds beef tripe, cleaned and cut into strips
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 1/2 cup beef broth
- 1/4 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic, and cook until softened.
- Add the beef tripe to the pot and cook until browned.
- Pour in the crushed tomatoes, beef broth, red wine, and tomato paste. Stir to combine.
- Season with oregano, salt, and pepper. Cover the pot and simmer for 2 hours, stirring occasionally.
- Once the tripe is tender and the sauce has thickened, remove from heat.
- Serve the Italian tripe hot, sprinkled with grated Parmesan cheese.
