Ivy Gourd Fry (dondakaya Fry)

Ingredients

  • 250g Ivy Gourd (Dondakaya), washed and sliced
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 green chili, slit
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
  2. Add chopped onions and green chili. Sauté until the onions turn golden brown.
  3. Add the sliced ivy gourd, turmeric powder, red chili powder, and salt. Mix well.
  4. Cover and cook on low heat for 15-20 minutes, stirring occasionally, until the ivy gourd is tender and slightly crispy.
  5. Garnish with fresh coriander leaves and serve hot.
