Ivy Gourd Fry (dondakaya Fry)
Ivy Gourd Fry, also known as Dondakaya Fry, is a popular dish from the Andhra Cuisine. This simple and flavorful recipe is a perfect side dish for rice or roti.
Ingredients
- 250g Ivy Gourd (Dondakaya), washed and sliced
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 1 green chili, slit
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
- Add chopped onions and green chili. Sauté until the onions turn golden brown.
- Add the sliced ivy gourd, turmeric powder, red chili powder, and salt. Mix well.
- Cover and cook on low heat for 15-20 minutes, stirring occasionally, until the ivy gourd is tender and slightly crispy.
- Garnish with fresh coriander leaves and serve hot.
