Ingredients

  • 2 cups of yam flour
  • 1/4 cup of egusi (ground melon seeds)
  • 1 pound of assorted meat (beef, goat, or chicken)
  • 1/2 cup of palm oil
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cups of spinach or bitterleaf
  • 2 tablespoons of ground crayfish
  • 1 teaspoon of ground chili pepper
  • Salt to taste

Instructions

  1. Prepare the pounded yam by boiling water in a pot and gradually adding the yam flour while stirring continuously until a smooth, stretchy consistency is achieved.
  2. In a separate pot, cook the assorted meat with onions, tomatoes, and seasoning until tender.
  3. Add the egusi, palm oil, ground crayfish, and chili pepper to the meat, and cook for about 10 minutes.
  4. Add the spinach or bitterleaf to the pot and cook for an additional 5 minutes.
  5. Season the egusi soup with salt to taste.
  6. Serve the pounded yam with the egusi soup and enjoy!
