Iyan Egusi (pounded Yam With Egusi Soup)
Iyan Egusi, also known as Pounded Yam with Egusi Soup, is a popular dish in Cameroonian cuisine. It consists of smooth, fluffy pounded yam served with a rich and flavorful egusi soup.
Ingredients
- 2 cups of yam flour
- 1/4 cup of egusi (ground melon seeds)
- 1 pound of assorted meat (beef, goat, or chicken)
- 1/2 cup of palm oil
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 cups of spinach or bitterleaf
- 2 tablespoons of ground crayfish
- 1 teaspoon of ground chili pepper
- Salt to taste
Instructions
- Prepare the pounded yam by boiling water in a pot and gradually adding the yam flour while stirring continuously until a smooth, stretchy consistency is achieved.
- In a separate pot, cook the assorted meat with onions, tomatoes, and seasoning until tender.
- Add the egusi, palm oil, ground crayfish, and chili pepper to the meat, and cook for about 10 minutes.
- Add the spinach or bitterleaf to the pot and cook for an additional 5 minutes.
- Season the egusi soup with salt to taste.
- Serve the pounded yam with the egusi soup and enjoy!
