Iyan Ogbono (pounded Yam With Ogbono Soup)
Iyan Ogbono, also known as Pounded Yam with Ogbono Soup, is a traditional Cameroonian dish that is both hearty and satisfying. The combination of smooth, fluffy pounded yam and rich, flavorful ogbono soup makes for a delicious and comforting meal.
Ingredients
- 2 cups of yam flour
- 1/4 cup of ogbono seeds
- 1 pound of assorted meat (beef, tripe, or cow foot)
- 1/2 cup of crayfish
- 2 cups of spinach or bitter leaf
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tablespoons of palm oil
- 3-4 cups of water or stock
- Salt and pepper to taste
Instructions
- In a large pot, bring the assorted meat to a boil with enough water to cover. Cook until tender, then remove from the pot and set aside.
- In a separate pot, toast the ogbono seeds over medium heat until fragrant, then grind them into a fine powder using a blender or food processor.
- Return the assorted meat to the pot and add the ground ogbono, crayfish, onions, tomatoes, and water or stock. Bring to a gentle boil and cook for 20-25 minutes, stirring occasionally.
- Add the spinach or bitter leaf and palm oil to the pot, then simmer for an additional 5-10 minutes. Season with salt and pepper to taste.
- While the soup is cooking, prepare the pounded yam by boiling water in a separate pot. Once the water is boiling, gradually add the yam flour while stirring continuously until a smooth, stretchy consistency is achieved.
- Divide the pounded yam into balls and serve alongside the ogbono soup.
