Iyan Okra (pounded Yam With Okra Soup)

Ingredients

  • 2 cups of yam flour
  • 1 pound of okra, chopped
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 1 bell pepper, chopped
  • 1 scotch bonnet pepper, diced
  • 1 pound of assorted meats (beef, tripe, and cow foot)
  • 1/2 cup of palm oil
  • 2 tablespoons of ground crayfish
  • 4 cups of water
  • Salt to taste

Instructions

  1. Prepare the pounded yam by boiling water in a pot and gradually adding the yam flour while stirring continuously until it forms a smooth, stretchy dough.
  2. In a separate pot, cook the assorted meats with onions, salt, and water until tender.
  3. Add the chopped okra, tomatoes, bell pepper, scotch bonnet pepper, and ground crayfish to the pot with the cooked meats.
  4. Pour in the palm oil and stir well. Let the mixture simmer for about 10 minutes.
  5. Serve the pounded yam with the okra soup and enjoy!
