Iyan Okra (pounded Yam With Okra Soup)
Iyan Okra, also known as Pounded Yam with Okra Soup, is a popular dish in Cameroonian cuisine. This hearty and flavorful meal is perfect for a satisfying lunch or dinner.
Ingredients
- 2 cups of yam flour
- 1 pound of okra, chopped
- 1 onion, chopped
- 2 tomatoes, diced
- 1 bell pepper, chopped
- 1 scotch bonnet pepper, diced
- 1 pound of assorted meats (beef, tripe, and cow foot)
- 1/2 cup of palm oil
- 2 tablespoons of ground crayfish
- 4 cups of water
- Salt to taste
Instructions
- Prepare the pounded yam by boiling water in a pot and gradually adding the yam flour while stirring continuously until it forms a smooth, stretchy dough.
- In a separate pot, cook the assorted meats with onions, salt, and water until tender.
- Add the chopped okra, tomatoes, bell pepper, scotch bonnet pepper, and ground crayfish to the pot with the cooked meats.
- Pour in the palm oil and stir well. Let the mixture simmer for about 10 minutes.
- Serve the pounded yam with the okra soup and enjoy!
