Jackfruit Pulled "pork" Sandwiches
Jackfruit Pulled "Pork" Sandwiches are a delicious and satisfying vegan alternative to traditional pulled pork sandwiches. With the perfect blend of spices and a tender, meaty texture, these sandwiches are sure to be a hit at your next gathering.
Ingredients
- 2 cans of young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup barbecue sauce
- 4 hamburger buns
Instructions
- Using your hands or a fork, shred the jackfruit into a bowl.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the shredded jackfruit to the skillet, along with the smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
- Pour in the barbecue sauce and stir to combine. Reduce the heat to low and let the mixture simmer for 20-25 minutes, stirring occasionally.
- Toast the hamburger buns and spoon the jackfruit mixture onto the bottom halves. Top with the other halves of the buns and serve hot.
