Jackfruit Pulled "pork" Sandwiches

Ingredients

  • 2 cans of young green jackfruit in brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup barbecue sauce
  • 4 hamburger buns

Instructions

  1. Using your hands or a fork, shred the jackfruit into a bowl.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  3. Add the shredded jackfruit to the skillet, along with the smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally.
  4. Pour in the barbecue sauce and stir to combine. Reduce the heat to low and let the mixture simmer for 20-25 minutes, stirring occasionally.
  5. Toast the hamburger buns and spoon the jackfruit mixture onto the bottom halves. Top with the other halves of the buns and serve hot.
