Jai (buddha's Delight Stir-fry)
Jai, also known as Buddha's Delight, is a classic vegetarian stir-fry dish from Cantonese cuisine. It is a flavorful and nutritious dish that is often enjoyed during Chinese New Year and other special occasions.
Ingredients
- 1 block of firm tofu, cubed
- 1 cup shiitake mushrooms, sliced
- 1 cup bamboo shoots, sliced
- 1 cup water chestnuts, sliced
- 1 cup bok choy, chopped
- 1/2 cup carrots, julienned
- 1/4 cup dried black fungus, rehydrated and sliced
- 1/4 cup dried lily buds, rehydrated
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional for non-vegetarian version)
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- 1/2 teaspoon white pepper
- 4 cups vegetable broth
- 2 tablespoons cornstarch mixed with 3 tablespoons water (slurry)
- 2 tablespoons vegetable oil
Instructions
- Heat vegetable oil in a wok or large skillet over medium heat.
- Add garlic and ginger, and stir-fry for 1 minute until fragrant.
- Add tofu, mushrooms, bamboo shoots, water chestnuts, bok choy, carrots, black fungus, and lily buds. Stir-fry for 3-4 minutes.
- Pour in vegetable broth, soy sauce, oyster sauce (if using), sesame oil, sugar, and white pepper. Bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Stir in the cornstarch slurry to thicken the sauce.
- Remove from heat and serve hot.
