Ingredients

  • 1 block of firm tofu, cubed
  • 1 cup shiitake mushrooms, sliced
  • 1 cup bamboo shoots, sliced
  • 1 cup water chestnuts, sliced
  • 1 cup bok choy, chopped
  • 1/2 cup carrots, julienned
  • 1/4 cup dried black fungus, rehydrated and sliced
  • 1/4 cup dried lily buds, rehydrated
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional for non-vegetarian version)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 4 cups vegetable broth
  • 2 tablespoons cornstarch mixed with 3 tablespoons water (slurry)
  • 2 tablespoons vegetable oil

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium heat.
  2. Add garlic and ginger, and stir-fry for 1 minute until fragrant.
  3. Add tofu, mushrooms, bamboo shoots, water chestnuts, bok choy, carrots, black fungus, and lily buds. Stir-fry for 3-4 minutes.
  4. Pour in vegetable broth, soy sauce, oyster sauce (if using), sesame oil, sugar, and white pepper. Bring to a boil.
  5. Reduce heat and simmer for 5 minutes.
  6. Stir in the cornstarch slurry to thicken the sauce.
  7. Remove from heat and serve hot.
