Ingredients

  • 2 cups cooked rice
  • 1 cup diced pork or tofu
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/4 cup diced carrot
  • 1/4 cup black bean paste
  • 1 tablespoon vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 cup water

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add diced pork or tofu, onion, zucchini, and carrot. Cook until the pork is no longer pink or the tofu is lightly browned.
  3. Stir in black bean paste, soy sauce, and sugar. Cook for 2 minutes.
  4. Pour in water and bring to a boil. Reduce heat and simmer for 15 minutes, stirring occasionally.
  5. Divide the cooked rice into serving bowls and spoon the jajang sauce over the rice.
