Jajang Tteokbokki Black Bean Rice Cakes (짜장떡볶이)

Ingredients

  • 500g tteok (Korean rice cakes)
  • 1/2 cup jajangmyeon black bean sauce
  • 1/4 cup water
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup diced carrot
  • 1/2 cup diced cabbage
  • 2 tbsp cooking oil
  • 1 tbsp sugar
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped scallions for garnish

Instructions

  1. Soak the tteok in warm water for 15 minutes, then drain.
  2. In a large pan, heat the cooking oil over medium heat. Add the diced onion, zucchini, carrot, and cabbage. Cook until the vegetables are tender.
  3. Add the jajangmyeon black bean sauce, water, sugar, minced garlic, salt, and black pepper to the pan. Stir well to combine.
  4. Add the drained tteok to the pan and stir to coat the rice cakes with the black bean sauce. Cook for 5-7 minutes, stirring occasionally, until the tteok is heated through and the sauce has thickened.
  5. Transfer the jajang tteokbokki to a serving dish and garnish with chopped scallions.
