Jajang Tteokbokki Black Bean Rice Cakes (짜장떡볶이)

Ingredients
- 500g tteok (Korean rice cakes)
- 1/2 cup jajangmyeon black bean sauce
- 1/4 cup water
- 1/2 cup diced onion
- 1/2 cup diced zucchini
- 1/2 cup diced carrot
- 1/2 cup diced cabbage
- 2 tbsp cooking oil
- 1 tbsp sugar
- 1/2 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped scallions for garnish
Instructions
- Soak the tteok in warm water for 15 minutes, then drain.
- In a large pan, heat the cooking oil over medium heat. Add the diced onion, zucchini, carrot, and cabbage. Cook until the vegetables are tender.
- Add the jajangmyeon black bean sauce, water, sugar, minced garlic, salt, and black pepper to the pan. Stir well to combine.
- Add the drained tteok to the pan and stir to coat the rice cakes with the black bean sauce. Cook for 5-7 minutes, stirring occasionally, until the tteok is heated through and the sauce has thickened.
- Transfer the jajang tteokbokki to a serving dish and garnish with chopped scallions.
