Jajang Tteokbokki (짜장떡볶이) Fried Rice is a popular Korean Chinese dish that combines the rich, savory flavors of black bean sauce with the spicy kick of tteokbokki (spicy rice cakes) and the comforting texture of fried rice.

Ingredients
- 2 cups cooked rice
- 1 cup tteokbokki (spicy rice cakes)
- 1/2 cup jajangmyeon sauce (black bean sauce)
- 1/2 cup diced onion
- 1/2 cup diced zucchini
- 1/2 cup diced carrots
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
- Add the diced onion, zucchini, and carrots, and sauté for 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the pan and add the remaining tablespoon of vegetable oil to the empty side of the pan.
- Add the minced garlic to the oil and sauté for 30 seconds until fragrant.
- Stir in the jajangmyeon sauce and tteokbokki, and cook for 2-3 minutes until heated through.
- Add the cooked rice to the pan and stir-fry for 3-4 minutes, mixing everything together until well combined.
- Season with salt and pepper to taste.
- Transfer the Jajang Tteokbokki Fried Rice to a serving dish and serve hot.
