Jajangbap Black Bean Sauce Rice (자장밥)

Ingredients

  • 2 cups of cooked white rice
  • 1 cup of diced pork or tofu for a vegetarian option
  • 1/2 cup of black bean paste
  • 1 tablespoon of vegetable oil
  • 1/2 cup of diced onion
  • 1/2 cup of diced zucchini
  • 1/2 cup of diced potato
  • 1 cup of chicken or vegetable broth
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sugar
  • 1 teaspoon of cornstarch mixed with 2 tablespoons of water
  • Sliced cucumber and pickled radish for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the diced pork or tofu and cook until browned.
  3. Add the onion, zucchini, and potato, and cook until the vegetables are slightly softened.
  4. Stir in the black bean paste, chicken or vegetable broth, soy sauce, and sugar. Simmer for 10 minutes.
  5. Stir in the cornstarch mixture and cook until the sauce thickens.
  6. To serve, place a portion of steamed rice in a bowl and ladle the black bean sauce over the rice.
  7. Garnish with sliced cucumber and pickled radish.
