자장밥 (Jajangbap) is a popular Korean-Chinese dish that consists of a savory black bean sauce served over a bed of steamed rice. This recipe provides a delicious homemade version of the classic dish, perfect for a comforting meal at home.
Ingredients
- 2 cups of cooked white rice
- 1 cup of diced pork or tofu for a vegetarian option
- 1/2 cup of black bean paste
- 1 tablespoon of vegetable oil
- 1/2 cup of diced onion
- 1/2 cup of diced zucchini
- 1/2 cup of diced potato
- 1 cup of chicken or vegetable broth
- 1 tablespoon of soy sauce
- 1 tablespoon of sugar
- 1 teaspoon of cornstarch mixed with 2 tablespoons of water
- Sliced cucumber and pickled radish for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the diced pork or tofu and cook until browned.
- Add the onion, zucchini, and potato, and cook until the vegetables are slightly softened.
- Stir in the black bean paste, chicken or vegetable broth, soy sauce, and sugar. Simmer for 10 minutes.
- Stir in the cornstarch mixture and cook until the sauce thickens.
- To serve, place a portion of steamed rice in a bowl and ladle the black bean sauce over the rice.
- Garnish with sliced cucumber and pickled radish.
