Ingredients
- 1 pound pork belly, thinly sliced
- 1 cup black bean paste
- 1 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, julienned
- 1 carrot, julienned
- 4 large flour tortillas
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add pork belly slices and cook until browned and crispy, about 8-10 minutes.
- Remove the pork from the skillet and set aside.
- In the same skillet, add diced onion and minced garlic. Cook until the onion is translucent.
- Add black bean paste to the skillet and stir to combine with the onion and garlic.
- Return the cooked pork belly to the skillet and stir to coat with the black bean sauce.
- Add julienned zucchini and carrot to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender-crisp.
- Warm the flour tortillas in a separate skillet or in the microwave.
- Divide the jajangmyeon filling among the tortillas, then fold the sides in and roll up to form burritos.
- Serve the Jajangmyeon Burritos immediately, with extra black bean sauce on the side for dipping.
