Ingredients

  • 1 pound pork belly, thinly sliced
  • 1 cup black bean paste
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, julienned
  • 1 carrot, julienned
  • 4 large flour tortillas
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add pork belly slices and cook until browned and crispy, about 8-10 minutes.
  3. Remove the pork from the skillet and set aside.
  4. In the same skillet, add diced onion and minced garlic. Cook until the onion is translucent.
  5. Add black bean paste to the skillet and stir to combine with the onion and garlic.
  6. Return the cooked pork belly to the skillet and stir to coat with the black bean sauce.
  7. Add julienned zucchini and carrot to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender-crisp.
  8. Warm the flour tortillas in a separate skillet or in the microwave.
  9. Divide the jajangmyeon filling among the tortillas, then fold the sides in and roll up to form burritos.
  10. Serve the Jajangmyeon Burritos immediately, with extra black bean sauce on the side for dipping.
