Ingredients
- 2 cups of vegetable broth
- 1 cup of coconut milk
- 1 cup of diced potatoes
- 1 cup of diced carrots
- 1 cup of diced tofu
- 1 tablespoon of vegetable oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric
- Salt and pepper to taste
- Chopped fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the ground coriander, cumin, and turmeric to the pot, and stir for a minute to toast the spices.
- Pour in the vegetable broth and coconut milk, then add the diced potatoes, carrots, and tofu. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes, or until the vegetables are tender.
