Ingredients
- 2 lbs beef stew meat, cut into chunks
- 2 tbsp Jamaican curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 potatoes, peeled and cubed
- 1 scotch bonnet pepper, whole
- 6 cups beef broth
- 2 sprigs thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium-high heat. Add the beef and brown on all sides.
- Stir in the curry powder, onion, and garlic. Cook for a few minutes until the onion is soft.
- Add the carrots, potatoes, scotch bonnet pepper, beef broth, and thyme to the pot. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
- Discard the scotch bonnet pepper and thyme sprigs before serving.
