Jamaican Beef Soup

Ingredients

  • 2 lbs beef stew meat, cut into chunks
  • 2 tbsp Jamaican curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 potatoes, peeled and cubed
  • 1 scotch bonnet pepper, whole
  • 6 cups beef broth
  • 2 sprigs thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium-high heat. Add the beef and brown on all sides.
  2. Stir in the curry powder, onion, and garlic. Cook for a few minutes until the onion is soft.
  3. Add the carrots, potatoes, scotch bonnet pepper, beef broth, and thyme to the pot. Season with salt and pepper.
  4. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  5. Discard the scotch bonnet pepper and thyme sprigs before serving.
