Ingredients
- 2 lbs chicken, cut into pieces
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tomatoes, chopped
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tsp thyme
- 1 tsp allspice
- 1 tsp paprika
- 1 cup chicken broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large bowl, combine the chicken pieces, soy sauce, thyme, allspice, and brown sugar. Let marinate for at least 30 minutes.
- Heat the vegetable oil in a large pot over medium heat. Add the marinated chicken pieces and brown on all sides.
- Remove the chicken from the pot and set aside. In the same pot, sauté the onions, garlic, bell pepper, and tomatoes until softened.
- Return the chicken to the pot and add the chicken broth. Season with salt, pepper, and paprika. Cover and simmer for 45 minutes, or until the chicken is cooked through and the sauce has thickened.
