Ingredients

  • 1 lb saltfish, soaked and flaked
  • 2 lbs callaloo, washed and chopped
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, chopped
  • 1/4 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

  2. Add onions, garlic, and scotch bonnet pepper. Sauté until onions are translucent.
  3. Add tomatoes and cook until softened.

  6. Season with salt and pepper to taste.
