Ingredients
- 1 lb saltfish, soaked and flaked
- 2 lbs callaloo, washed and chopped
- 1 onion, chopped

- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions

- Add tomatoes and cook until softened.
- Add flaked saltfish to the pot and cook for 5 minutes.
- Add callaloo and coconut milk. Cover and simmer for 10 minutes, stirring occasionally.
- Season with salt and pepper to taste.
