Ingredients

  • 1 lb callaloo, chopped
  • 1 lb shrimp, peeled and deveined
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and minced
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and scotch bonnet pepper, and sauté until the onion is translucent.
  3. Add the tomatoes and cook for 2-3 minutes until they start to soften.
