Jamaican Chicken Soup

Ingredients

  • 2 lbs chicken thighs, bone-in, skin removed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 1 scotch bonnet pepper, whole
  • 1 tsp thyme
  • 1 tsp allspice
  • 6 cups chicken broth
  • 2 cups water
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chicken thighs and brown on all sides. Remove and set aside.
  2. In the same pot, add the onion and garlic. Sauté until fragrant.
  3. Add the carrots, celery, scotch bonnet pepper, thyme, and allspice. Cook for a few minutes.
  4. Pour in the chicken broth and water. Return the chicken thighs to the pot. Season with salt and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. Remove the scotch bonnet pepper and discard. Shred the chicken into bite-sized pieces.
  7. Adjust the seasoning if needed. Serve the soup hot, garnished with chopped green onions.
