Jamaican Chicken Soup

Ingredients
- 2 lbs chicken thighs, bone-in, skin removed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 scotch bonnet pepper, whole
- 1 tsp thyme
- 1 tsp allspice
- 6 cups chicken broth
- 2 cups water
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- In a large pot, heat some oil over medium heat. Add the chicken thighs and brown on all sides. Remove and set aside.
- In the same pot, add the onion and garlic. Sauté until fragrant.
- Add the carrots, celery, scotch bonnet pepper, thyme, and allspice. Cook for a few minutes.
- Pour in the chicken broth and water. Return the chicken thighs to the pot. Season with salt and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
- Remove the scotch bonnet pepper and discard. Shred the chicken into bite-sized pieces.
- Adjust the seasoning if needed. Serve the soup hot, garnished with chopped green onions.
