Ingredients

  • 2 lbs goat meat, cut into chunks

  • 2 sprigs thyme
  • 2 cups coconut milk
  • 2 cups water
  • 2 cups rice
  • 1 can kidney beans, drained and rinsed
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, season the goat meat with curry powder, salt, and pepper. Let it marinate for at least 1 hour.
  2. In a large pot, heat the vegetable oil over medium heat. Add the marinated goat meat and cook until browned on all sides.
  3. Add the onion, garlic, scotch bonnet pepper, and thyme to the pot. Cook for 5 minutes until the onions are soft.
  4. Pour in the coconut milk and water. Bring to a boil, then reduce the heat and let it simmer for 1.5 hours until the meat is tender.
