Ingredients
- 2 lbs goat meat, cut into chunks
- 2 tbsp Jamaican curry powder

- 2 cups coconut milk
- 2 cups water
- 2 cups rice
- 1 can kidney beans, drained and rinsed

Instructions
- In a large bowl, season the goat meat with curry powder, salt, and pepper. Let it marinate for at least 1 hour.
- In a large pot, heat the vegetable oil over medium heat. Add the marinated goat meat and cook until browned on all sides.
- Add the onion, garlic, scotch bonnet pepper, and thyme to the pot. Cook for 5 minutes until the onions are soft.
- Pour in the coconut milk and water. Bring to a boil, then reduce the heat and let it simmer for 1.5 hours until the meat is tender.
- While the goat is cooking, prepare the rice and peas. In a separate pot, combine the rice, kidney beans, and coconut milk. Add water as needed and cook until the rice is tender.
