Jamaican Curry Lobster With Rice

Ingredients

  • 2 lbs lobster tails, cleaned and cut into pieces
  • 2 tbsp Jamaican curry powder
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 scotch bonnet pepper, seeded and minced
  • 1 cup coconut milk
  • 2 cups chicken broth
  • 2 cups long-grain white rice
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and scotch bonnet pepper. Sauté until the onion is soft and translucent.
  2. Add the Jamaican curry powder to the pot and stir for 1-2 minutes to toast the spices.
