Jamaican Curry Lobster With Rice

Ingredients
- 2 lbs lobster tails, cleaned and cut into pieces
- 2 tbsp Jamaican curry powder
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 scotch bonnet pepper, seeded and minced
- 1 cup coconut milk
- 2 cups chicken broth
- 2 cups long-grain white rice
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and scotch bonnet pepper. Sauté until the onion is soft and translucent.
- Add the Jamaican curry powder to the pot and stir for 1-2 minutes to toast the spices.
- Pour in the coconut milk and chicken broth. Bring the mixture to a simmer.
- Add the lobster pieces to the pot and cook for 8-10 minutes, or until the lobster is opaque and cooked through.
- In a separate pot, cook the rice according to package instructions.
