Jamaican Curry Shrimp Lo Mein

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 oz lo mein noodles
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 tbsp Jamaican curry powder
  • 1 tsp soy sauce
  • 1 tsp brown sugar
  • 1/2 cup coconut milk
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot of boiling water, cook the lo mein noodles according to the package instructions. Drain and set aside.
