Jamaican Curry Vegetable Fried Rice

Ingredients
- 3 cups cooked rice
- 2 tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, diced
- 1 cup cabbage, shredded
- 2 tbsp Jamaican curry powder
- 2 tbsp soy sauce
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add diced onion and minced garlic, and sauté until fragrant.
- Add diced bell pepper, carrot, and shredded cabbage. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Push the vegetables to one side of the pan and add Jamaican curry powder to the empty space. Toast the curry powder for 1 minute to release its flavors.
- Stir the curry powder into the vegetables, then add the cooked rice to the pan.
- Drizzle soy sauce over the rice and vegetables, then sprinkle with thyme, salt, and pepper. Stir-fry for another 3-4 minutes until everything is well combined and heated through.
