Jamaican Curry Vegetable Fried Rice

Ingredients

  • 3 cups cooked rice
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 cup cabbage, shredded
  • 2 tbsp Jamaican curry powder
  • 2 tbsp soy sauce
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add diced onion and minced garlic, and sauté until fragrant.
  3. Add diced bell pepper, carrot, and shredded cabbage. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
  4. Push the vegetables to one side of the pan and add Jamaican curry powder to the empty space. Toast the curry powder for 1 minute to release its flavors.
  5. Stir the curry powder into the vegetables, then add the cooked rice to the pan.
  6. Drizzle soy sauce over the rice and vegetables, then sprinkle with thyme, salt, and pepper. Stir-fry for another 3-4 minutes until everything is well combined and heated through.
  7. Remove from heat and serve the Jamaican Curry Vegetable Fried Rice hot.
