Jamaican Escoveitch Lobster

Ingredients

  • 4 lobster tails
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup vegetable oil
  • 1 cup vinegar
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 2 carrots, julienned
  • 2 scotch bonnet peppers, sliced
  • 4 garlic cloves, minced
  • 1 tsp sugar
  • 1 tsp allspice
  • 1 tsp thyme
  • 1 bay leaf
  • 1 cup water
  • 2 tbsp chopped scallions

Instructions

  1. Prepare the lobster tails by cutting them in half lengthwise and removing the meat from the shells.
  2. In a bowl, mix the flour, salt, and black pepper. Dredge the lobster meat in the seasoned flour.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Fry the lobster until golden brown, about 3-4 minutes per side. Remove and set aside.
  4. In the same skillet, add the vinegar, onion, bell pepper, carrots, scotch bonnet peppers, garlic, sugar, allspice, thyme, bay leaf, and water. Bring to a simmer and cook for 5 minutes.
  5. Place the fried lobster in a serving dish and pour the escoveitch sauce over the lobster.
  6. Garnish with chopped scallions and serve hot.
