Jamaican Escoveitch Lobster

Ingredients
- 4 lobster tails
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp black pepper
- 1 cup vegetable oil
- 1 cup vinegar
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 carrots, julienned
- 2 scotch bonnet peppers, sliced
- 4 garlic cloves, minced
- 1 tsp sugar
- 1 tsp allspice
- 1 tsp thyme
- 1 bay leaf
- 1 cup water
- 2 tbsp chopped scallions
Instructions
- Prepare the lobster tails by cutting them in half lengthwise and removing the meat from the shells.
- In a bowl, mix the flour, salt, and black pepper. Dredge the lobster meat in the seasoned flour.
- Heat the vegetable oil in a large skillet over medium-high heat. Fry the lobster until golden brown, about 3-4 minutes per side. Remove and set aside.
- In the same skillet, add the vinegar, onion, bell pepper, carrots, scotch bonnet peppers, garlic, sugar, allspice, thyme, bay leaf, and water. Bring to a simmer and cook for 5 minutes.
- Place the fried lobster in a serving dish and pour the escoveitch sauce over the lobster.
- Garnish with chopped scallions and serve hot.
