Jamaican Escoveitch Shrimp

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup vegetable oil for frying
  • 1 cup white vinegar
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 carrots, julienned
  • 2 scotch bonnet peppers, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon allspice
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the shrimp, salt, and black pepper. Toss to coat the shrimp evenly.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Dredge the seasoned shrimp in the flour, shaking off any excess, and carefully place them in the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Remove the shrimp from the skillet and place them on a paper towel-lined plate to drain excess oil.
  3. In a separate saucepan, combine the white vinegar, sugar, allspice, thyme, and salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
  4. Place the sliced onion, bell pepper, carrots, scotch bonnet peppers, and minced garlic in a large bowl. Pour the hot vinegar mixture over the vegetables and let it marinate for 10 minutes.
