Jamaican Jerk Lobster Stir-fry

Ingredients
- 2 lobster tails, shelled and cut into chunks
- 2 tablespoons Jamaican jerk seasoning
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup snow peas
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 4 cups cooked white rice for serving
Instructions
- In a bowl, toss the lobster chunks with Jamaican jerk seasoning until well coated.
- Heat vegetable oil in a large skillet or wok over high heat.
- Add the seasoned lobster to the skillet and stir-fry for 2-3 minutes until almost cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, garlic, and ginger. Stir-fry for 2-3 minutes until the vegetables are slightly tender.
- Return the cooked lobster to the skillet, add snow peas, and drizzle with soy sauce. Stir-fry for an additional 2-3 minutes until the lobster is fully cooked and the vegetables are crisp-tender.
- Season with salt and pepper to taste.
