Jamaican Jerk Pork Stir-fry

Ingredients

  • 1 pound pork tenderloin, thinly sliced
  • 2 tablespoons Jamaican jerk seasoning
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 cup snow peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. In a bowl, combine the pork slices with Jamaican jerk seasoning and soy sauce. Let it marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over high heat. Add the marinated pork and stir-fry for 2-3 minutes until browned. Remove from the skillet and set aside.
  3. In the same skillet, add the onion, bell pepper, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Add the minced garlic and grated ginger to the skillet. Stir-fry for another minute.
  5. Return the cooked pork to the skillet and toss everything together. Season with salt and pepper to taste.
  6. Garnish with chopped green onions before serving.
