Jamaican Jerk Tofu Stir-fry

Ingredients
- 1 block of firm tofu, cubed
- 2 tablespoons Jamaican jerk seasoning
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Press the tofu to remove excess moisture, then toss the tofu cubes with Jamaican jerk seasoning and soy sauce. Let it marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the bell peppers, snap peas, onion, garlic, and ginger. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet, add the green onions, and toss everything together. Season with salt and pepper to taste.
- Sprinkle the stir-fry with sesame seeds before serving.
