Jamaican Jerk Tofu Stir-fry

Ingredients

  • 1 block of firm tofu, cubed
  • 2 tablespoons Jamaican jerk seasoning
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Press the tofu to remove excess moisture, then toss the tofu cubes with Jamaican jerk seasoning and soy sauce. Let it marinate for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the bell peppers, snap peas, onion, garlic, and ginger. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  4. Return the tofu to the skillet, add the green onions, and toss everything together. Season with salt and pepper to taste.
  5. Sprinkle the stir-fry with sesame seeds before serving.
