Jamaican Oxtail Stew

Ingredients

  • 3 lbs oxtail, cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 2 carrots, sliced
  • 2 sprigs thyme
  • 2 scallions, chopped
  • 2 cups beef broth
  • 1 cup red wine
  • Salt and pepper to taste

Instructions

  1. Season the oxtail pieces with salt and pepper.
  2. Heat the vegetable oil in a large pot over medium heat. Brown the oxtail pieces on all sides, then remove and set aside.
  3. Add the onion, garlic, tomatoes, carrots, thyme, and scallions to the pot. Cook until the vegetables are softened.
  4. Return the oxtail to the pot and pour in the beef broth and red wine. Bring to a boil, then reduce heat to low and simmer for 2.5 to 3 hours, or until the oxtail is tender.
  5. Adjust seasoning with salt and pepper if needed. Serve the Jamaican Oxtail Stew hot with rice or dumplings.
