Jamaican Oxtail Stew

Ingredients
- 3 lbs oxtail, cut into pieces
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, sliced
- 2 sprigs thyme
- 2 scallions, chopped
- 2 cups beef broth
- 1 cup red wine
- Salt and pepper to taste
Instructions
- Season the oxtail pieces with salt and pepper.
- Heat the vegetable oil in a large pot over medium heat. Brown the oxtail pieces on all sides, then remove and set aside.
- Add the onion, garlic, tomatoes, carrots, thyme, and scallions to the pot. Cook until the vegetables are softened.
- Return the oxtail to the pot and pour in the beef broth and red wine. Bring to a boil, then reduce heat to low and simmer for 2.5 to 3 hours, or until the oxtail is tender.
- Adjust seasoning with salt and pepper if needed. Serve the Jamaican Oxtail Stew hot with rice or dumplings.
