Jamaican Pineapple Upside-down Cake

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1 can (20 oz) pineapple slices in juice, drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/3 cup vegetable oil
  • 1 cup pineapple juice
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter and pour it into a 9x9 inch baking pan.
  3. Sprinkle the brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices on top of the brown sugar, and place a cherry in the center of each slice.
  5. In a large bowl, mix the flour, granulated sugar, oil, pineapple juice, baking powder, salt, and vanilla extract until well combined.
  6. Pour the batter over the pineapple slices in the pan.
  7. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
