Jamaican Pumpkin Soup

Ingredients

  • 2 cups diced pumpkin
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 scotch bonnet pepper, whole
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion and garlic until fragrant.
  2. Add the diced pumpkin, carrot, celery, and whole scotch bonnet pepper to the pot.
  3. Pour in the vegetable broth and add the thyme, allspice, and nutmeg. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Remove the scotch bonnet pepper and discard.
  5. Stir in the coconut milk and season with salt and pepper.
  6. Using an immersion blender, blend the soup until smooth.
