Ingredients
- 2 cups diced pumpkin
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 scotch bonnet pepper, whole
- 6 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1 cup coconut milk
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion and garlic until fragrant.
- Add the diced pumpkin, carrot, celery, and whole scotch bonnet pepper to the pot.
- Pour in the vegetable broth and add the thyme, allspice, and nutmeg. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Remove the scotch bonnet pepper and discard.
- Stir in the coconut milk and season with salt and pepper.
- Using an immersion blender, blend the soup until smooth.
