Jamaican Rice And Chicken

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 cups long-grain white rice
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 scotch bonnet pepper, seeded and minced
  • 2 teaspoons dried thyme
  • 1 teaspoon allspice
  • 1 teaspoon paprika
  • 3 cups chicken broth
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and paprika.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the chicken thighs on both sides, then remove and set aside.
  3. In the same pot, sauté the onion, garlic, and bell pepper until softened.
  4. Add the rice, thyme, allspice, and scotch bonnet pepper. Stir to combine with the vegetables.
  5. Pour in the chicken broth and bring to a boil. Reduce the heat to low, then return the chicken thighs to the pot.
  6. Cover and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  7. Remove from heat and let it rest for 5 minutes before serving.
