Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 scotch bonnet pepper, seeded and minced
- 2 teaspoons dried thyme
- 1 teaspoon allspice
- 1 teaspoon paprika
- 3 cups chicken broth
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and paprika.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the chicken thighs on both sides, then remove and set aside.
- In the same pot, sauté the onion, garlic, and bell pepper until softened.
- Add the rice, thyme, allspice, and scotch bonnet pepper. Stir to combine with the vegetables.
- Pour in the chicken broth and bring to a boil. Reduce the heat to low, then return the chicken thighs to the pot.
- Cover and simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
- Remove from heat and let it rest for 5 minutes before serving.
