Jamaican Sorrel Cheesecake

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup Jamaican sorrel syrup
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/4 cup all-purpose flour
- 1/4 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust in the preheated oven for 10 minutes, then remove and let it cool.
- In a small saucepan, heat the Jamaican sorrel syrup over low heat until it thickens slightly. Let it cool.
- In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla extract until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the flour and cinnamon.
- Pour half of the cream cheese mixture over the cooled crust. Drizzle half of the sorrel syrup over the cream cheese mixture. Repeat with the remaining cream cheese mixture and sorrel syrup.
- Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Let the cheesecake cool completely, then refrigerate for at least 4 hours or overnight before serving.
