Janchi Guksu Feast Noodles (잔치국수)

Ingredients

  • 8 oz thin wheat noodles
  • 6 cups vegetable or chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar
  • 1 cup julienned carrots
  • 1 cup julienned zucchini
  • 1 cup julienned cucumber
  • 1 cup thinly sliced mushrooms
  • 4 hard-boiled eggs, halved
  • 4 green onions, thinly sliced
  • 1/4 cup toasted sesame seeds

Instructions

  1. Boil the noodles according to package instructions. Drain and rinse with cold water. Set aside.
  2. In a pot, bring the broth, soy sauce, sesame oil, and sugar to a simmer.
  3. Divide the cooked noodles among serving bowls.
  4. Ladle the hot broth over the noodles.
