Ingredients

  • 1 pound dried white beans
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 6 cups vegetable broth
  • Salt and pepper to taste
  • Extra virgin olive oil

Instructions

  1. Rinse the dried white beans and soak them in water overnight.
  2. In a large pot, heat some olive oil over medium heat and sauté the onion, carrots, celery, and garlic until softened.
  3. Add the soaked beans, bay leaf, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
