Jani Me Fasule is a traditional Albanian bean soup that is hearty, flavorful, and perfect for a comforting meal. This recipe has been passed down through generations and is a staple in Arbëreshë cuisine.
Ingredients
- 1 pound dried white beans
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 bay leaf
- 6 cups vegetable broth
- Salt and pepper to taste
- Extra virgin olive oil
Instructions
- Rinse the dried white beans and soak them in water overnight.
- In a large pot, heat some olive oil over medium heat and sauté the onion, carrots, celery, and garlic until softened.
- Add the soaked beans, bay leaf, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
