Japchae Bibimbap (잡채비빔밥)

Ingredients

  • 4 cups cooked short-grain rice
  • 2 cups prepared japchae (stir-fried glass noodles)
  • 1 cup julienned carrots
  • 1 cup julienned spinach
  • 1 cup bean sprouts
  • 4 fried eggs
  • 4 tablespoons gochujang (Korean red chili paste)
  • 4 tablespoons sesame oil
  • Sesame seeds for garnish
  • Sliced green onions for garnish

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Prepare the japchae and set aside.
  3. Blanch the julienned carrots, spinach, and bean sprouts in boiling water for 1-2 minutes, then drain and set aside.
  4. In a large bowl, divide the cooked rice among 4 serving bowls.
  5. Arrange the japchae, blanched vegetables, and fried eggs on top of the rice in each bowl.
  6. Drizzle each bowl with gochujang and sesame oil.
  7. Garnish with sesame seeds and sliced green onions.
  8. Before eating, mix all the ingredients together thoroughly.
