Japchae Hot Pot (잡채전골)
잡채전골 (Japchae Hot Pot) is a popular Korean dish that combines the flavors of japchae (stir-fried glass noodles) with the heartiness of a hot pot. It's a comforting and satisfying meal perfect for sharing with family and friends.
Ingredients
- 200g sweet potato glass noodles
- 1/2 cup soy sauce
- 3 tbsp sesame oil
- 2 tbsp sugar
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 150g shiitake mushrooms, sliced
- 200g firm tofu, cut into cubes
- 4 cups vegetable broth
- 4 cups water
- 4 green onions, chopped
- 1/2 cup kimchi
- 1 cup enoki mushrooms
- 1 cup baby spinach
Instructions
- Soak the sweet potato glass noodles in hot water for 15 minutes, then drain and set aside.
- In a small bowl, mix together soy sauce, 2 tbsp sesame oil, and sugar. Set aside.
- Heat vegetable oil in a large pot over medium heat. Add onion, carrots, and red bell pepper. Stir-fry for 3-4 minutes.
- Add shiitake mushrooms and tofu to the pot. Cook for another 2 minutes.
- Pour in the vegetable broth and water. Bring to a boil.
- Add the soaked glass noodles, green onions, and kimchi to the pot. Simmer for 5 minutes.
- Add enoki mushrooms and baby spinach. Cook for an additional 2 minutes.
- Drizzle 1 tbsp sesame oil over the hot pot before serving.
