Japchae Hot Pot (잡채전골)

Ingredients

  • 200g sweet potato glass noodles
  • 1/2 cup soy sauce
  • 3 tbsp sesame oil
  • 2 tbsp sugar
  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 150g shiitake mushrooms, sliced
  • 200g firm tofu, cut into cubes
  • 4 cups vegetable broth
  • 4 cups water
  • 4 green onions, chopped
  • 1/2 cup kimchi
  • 1 cup enoki mushrooms
  • 1 cup baby spinach

Instructions

  1. Soak the sweet potato glass noodles in hot water for 15 minutes, then drain and set aside.
  2. In a small bowl, mix together soy sauce, 2 tbsp sesame oil, and sugar. Set aside.
  3. Heat vegetable oil in a large pot over medium heat. Add onion, carrots, and red bell pepper. Stir-fry for 3-4 minutes.
  4. Add shiitake mushrooms and tofu to the pot. Cook for another 2 minutes.
  5. Pour in the vegetable broth and water. Bring to a boil.
  6. Add the soaked glass noodles, green onions, and kimchi to the pot. Simmer for 5 minutes.
  7. Add enoki mushrooms and baby spinach. Cook for an additional 2 minutes.
  8. Drizzle 1 tbsp sesame oil over the hot pot before serving.
