Japchae Jeon (잡채전)
잡채전 (Japchae Jeon) is a delicious Korean dish that combines the flavors of japchae (stir-fried glass noodles) with the crispy texture of jeon (pancake). It's a popular dish in Koryo-saram Cuisine, which is the cuisine of the Korean diaspora in Central Asia.
Ingredients
- 200g sweet potato glass noodles
- 1 cup julienned carrots
- 1 cup julienned bell peppers
- 1 cup julienned onions
- 200g firm tofu, drained and diced
- 2 eggs
- 4 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon sugar
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- Vegetable oil for frying
- Salt to taste
Instructions
- Soak the sweet potato glass noodles in hot water for 15 minutes, then drain and cut into shorter lengths.
- In a large bowl, mix the noodles, carrots, bell peppers, onions, tofu, soy sauce, sesame oil, sugar, and black pepper.
- Beat the eggs and mix them into the noodle mixture.
- Heat some vegetable oil in a non-stick skillet over medium heat.
- Take a spoonful of the noodle mixture and coat it with flour, then place it in the skillet and flatten it with a spatula to form a pancake.
- Fry the pancake for 3-4 minutes on each side, or until golden brown and crispy.
- Repeat the process with the remaining noodle mixture, adding more oil to the skillet as needed.
- Season the pancakes with a pinch of salt and serve hot.
