Japchae Noodle Stir-Fry (잡채)

Ingredients

  • 4 oz sweet potato starch noodles
  • 1/2 lb beef, thinly sliced
  • 2 garlic cloves, minced
  • 1/4 cup soy sauce
  • 2 tbsp sugar
  • 2 tbsp sesame oil
  • 1/2 cup julienned carrots
  • 1/2 cup julienned bell peppers
  • 1/2 cup julienned onion
  • 1/2 cup sliced mushrooms
  • 1/2 cup spinach
  • 2 green onions, chopped
  • 2 tbsp vegetable oil
  • Sesame seeds for garnish

Instructions

  1. Boil the sweet potato starch noodles according to package instructions, then rinse with cold water and set aside.
  2. In a bowl, mix the beef with garlic, soy sauce, sugar, and sesame oil. Let it marinate for 10 minutes.
  3. Heat vegetable oil in a large pan over medium heat. Add the marinated beef and cook until browned. Remove from the pan and set aside.
  4. In the same pan, stir-fry the carrots, bell peppers, onion, and mushrooms until they are tender-crisp.
  5. Add the spinach and cooked noodles to the pan, then return the beef to the pan.
  6. Stir everything together and cook for an additional 2-3 minutes.
  7. Garnish with chopped green onions and sesame seeds before serving.
