Japchae Noodle Stir-Fry (잡채)
잡채 (Japchae) is a popular Korean dish made with sweet potato starch noodles, stir-fried with various vegetables and meat. It's a flavorful and colorful dish that's perfect for a special occasion or a simple weeknight dinner.
Ingredients
- 4 oz sweet potato starch noodles
- 1/2 lb beef, thinly sliced
- 2 garlic cloves, minced
- 1/4 cup soy sauce
- 2 tbsp sugar
- 2 tbsp sesame oil
- 1/2 cup julienned carrots
- 1/2 cup julienned bell peppers
- 1/2 cup julienned onion
- 1/2 cup sliced mushrooms
- 1/2 cup spinach
- 2 green onions, chopped
- 2 tbsp vegetable oil
- Sesame seeds for garnish
Instructions
- Boil the sweet potato starch noodles according to package instructions, then rinse with cold water and set aside.
- In a bowl, mix the beef with garlic, soy sauce, sugar, and sesame oil. Let it marinate for 10 minutes.
- Heat vegetable oil in a large pan over medium heat. Add the marinated beef and cook until browned. Remove from the pan and set aside.
- In the same pan, stir-fry the carrots, bell peppers, onion, and mushrooms until they are tender-crisp.
- Add the spinach and cooked noodles to the pan, then return the beef to the pan.
- Stir everything together and cook for an additional 2-3 minutes.
- Garnish with chopped green onions and sesame seeds before serving.
