Japchae Noodles (잡채)
잡채 (Japchae) is a popular Korean dish made with sweet potato noodles, vegetables, and meat, seasoned with soy sauce and sesame oil. It is a flavorful and colorful dish that is perfect for a special occasion or a simple family meal.
Ingredients
- 200g sweet potato noodles
- 200g beef, thinly sliced
- 1/2 cup soy sauce
- 3 tablespoons sesame oil
- 1 tablespoon sugar
- 1 onion, thinly sliced
- 2 carrots, julienned
- 1 red bell pepper, julienned
- 4 shiitake mushrooms, sliced
- 4 garlic cloves, minced
- 4 green onions, cut into 2-inch pieces
- 1/2 cup spinach
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Boil the sweet potato noodles according to the package instructions. Drain and rinse with cold water. Set aside.
- In a bowl, marinate the beef with soy sauce, 1 tablespoon of sesame oil, and sugar. Set aside for 10 minutes.
- Heat vegetable oil in a large pan over medium heat. Add the marinated beef and stir-fry until cooked. Remove from the pan and set aside.
- In the same pan, add the remaining sesame oil and sauté the garlic, onion, carrots, bell pepper, and shiitake mushrooms until tender.
- Add the cooked sweet potato noodles, marinated beef, spinach, and green onions to the pan. Stir-fry for 3-4 minutes.
- Season with salt and pepper to taste. Remove from heat and transfer to a serving dish.
