잡채 (Japchae) is a popular Korean dish made with sweet potato noodles, vegetables, and meat, seasoned with soy sauce and sesame oil. It is a flavorful and colorful dish that is perfect for a special occasion or a simple family meal.

Japchae Noodles (잡채)

Ingredients

  • 200g sweet potato noodles
  • 200g beef, thinly sliced
  • 1/2 cup soy sauce
  • 3 tablespoons sesame oil
  • 1 tablespoon sugar
  • 1 onion, thinly sliced
  • 2 carrots, julienned
  • 1 red bell pepper, julienned
  • 4 shiitake mushrooms, sliced
  • 4 garlic cloves, minced
  • 4 green onions, cut into 2-inch pieces
  • 1/2 cup spinach
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Boil the sweet potato noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  2. In a bowl, marinate the beef with soy sauce, 1 tablespoon of sesame oil, and sugar. Set aside for 10 minutes.
  3. Heat vegetable oil in a large pan over medium heat. Add the marinated beef and stir-fry until cooked. Remove from the pan and set aside.
  4. In the same pan, add the remaining sesame oil and sauté the garlic, onion, carrots, bell pepper, and shiitake mushrooms until tender.
  5. Add the cooked sweet potato noodles, marinated beef, spinach, and green onions to the pan. Stir-fry for 3-4 minutes.
  6. Season with salt and pepper to taste. Remove from heat and transfer to a serving dish.
