Jardaloo Salli Murghi (जरदालू साली मुर्गी)

Ingredients
- 1 kg chicken, cut into pieces
- 1 cup dried apricots
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 cup tomato puree
- 2 tbsp oil
- Salt to taste
- 1/2 cup fried potato sticks (Salli)
- Fresh coriander leaves for garnish
Instructions
- Soak the dried apricots in warm water for 30 minutes, then drain and set aside.
- Heat oil in a large pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
- Add the minced garlic, grated ginger, and sauté for a few minutes.
- Now add the chicken pieces and cook until they are browned on all sides.
- Stir in the coriander powder, turmeric powder, red chili powder, and salt. Cook for a few minutes.
- Pour in the tomato puree and cook for another 5 minutes.
- Add the soaked apricots and enough water to cover the chicken. Cover and simmer for 20-25 minutes until the chicken is cooked through.
- Garnish with fried potato sticks (Salli) and fresh coriander leaves before serving.
