Jareesh Djaj (spiced Chicken And Rice Casserole)

Ingredients
- 1 whole chicken, cut into pieces
- 2 cups jareesh (cracked wheat)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 4 cups chicken broth
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chicken pieces to the pot and brown on all sides.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes until fragrant.
- Add the jareesh (cracked wheat) to the pot and stir to combine with the chicken and spices.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat, cover the pot, and simmer for 45-50 minutes, or until the jareesh is tender and the chicken is cooked through.
- Adjust the seasoning with salt and pepper, if needed.
- Serve the Jareesh Djaj hot, garnished with fresh herbs if desired.
