Jareesh (spiced Chicken And Rice Pilaf)
Jareesh is a traditional Kuwaiti dish that combines spiced chicken with a flavorful rice pilaf. This comforting and aromatic dish is perfect for a hearty family meal or a special occasion.
Ingredients
- 1 whole chicken, cut into pieces
- 2 cups jareesh (cracked wheat)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 4 cups chicken broth
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chicken pieces to the pot and brown them on all sides.
- Stir in the diced tomatoes, tomato paste, and spices. Cook for a few minutes until the tomatoes start to break down.
- Add the jareesh (cracked wheat) to the pot and stir to combine with the chicken and spices.
- Pour in the chicken broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 45-50 minutes, or until the jareesh is tender and the chicken is cooked through.
- Once done, fluff the jareesh and chicken pilaf with a fork, and garnish with chopped fresh parsley before serving.
