Jaretina Ispod Peke (peka-style Lamb Shanks)
Jaretina ispod peke, or Peka-style Lamb Shanks, is a traditional Croatian dish that is slow-cooked to perfection. The dish is named after the bell-shaped dome used for cooking, called "peka."
Ingredients
- 4 lamb shanks
- 2 onions, sliced
- 4 garlic cloves, minced
- 2 carrots, chopped
- 2 potatoes, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup red wine
- 1 cup chicken broth
- 2 tbsp olive oil
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Season the lamb shanks with salt, pepper, and dried rosemary.
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Sear the lamb shanks until browned on all sides, then remove from the pot and set aside.
- Add the onions, garlic, carrots, and bell peppers to the pot and sauté until softened.
- Pour in the red wine and chicken broth, then return the lamb shanks to the pot.
- Cover the pot with a lid or aluminum foil, and transfer to the preheated oven.
- Cook for 1.5 to 2 hours, or until the lamb is tender and falling off the bone.
- Serve the lamb shanks with the vegetables and pan juices.
