Jasha Paa Tshoem (Bhutanese Spicy Chicken Stir-Fry with Vegetables)

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into thin strips
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2-3 green chilies, sliced
  • 1 cup mixed vegetables (carrots, bell peppers, snow peas)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat.
  2. Add the chicken strips and stir-fry until they are cooked through. Remove the chicken from the skillet and set aside.
  3. Heat the remaining 1 tbsp of oil in the same skillet. Add the sliced onion, minced garlic, grated ginger, and green chilies. Stir-fry until the onions are translucent.
  4. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are tender-crisp.
  5. Return the cooked chicken to the skillet. Add the cumin powder, coriander powder, turmeric powder, and salt. Stir-fry for another 2-3 minutes to blend the flavors.
  6. Garnish with chopped cilantro and serve hot.
