Javanese Noodles (mee Jawa Perfection)

Ingredients

  • 300g yellow noodles
  • 200g chicken breast, sliced
  • 2 tablespoons cooking oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon tamarind paste
  • 1 teaspoon chili powder
  • 1 cup bean sprouts
  • 2 hard-boiled eggs, halved
  • 4 sprigs of cilantro, for garnish

Instructions

  1. Boil the yellow noodles until al dente, then drain and set aside.
  2. In a wok, heat the cooking oil over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.
  3. Add the sliced chicken breast and cook until no longer pink.
  4. Stir in the sweet soy sauce, tamarind paste, and chili powder. Mix well.
  5. Add the boiled yellow noodles and bean sprouts to the wok. Toss to combine and cook for a few minutes.
  6. Divide the noodles into serving bowls. Top each bowl with a halved hard-boiled egg and garnish with cilantro.
